This season Merchant Gourmet Whole Chestnuts are taking centre stage – check out this gorgeous carrot, chestnut and fig salad.
Preheat the oven to 180°C. Peel and chop 3 carrots into chunks and toss in 1tbsp oil. Roast for 30-40min until soft. Meanwhile, squeeze the juice from ½ pomegranate (reserving the seeds) and mix with 3tbsp olive oil, 1tsp balsamic vinegar and seasoning. Quarter 4 fresh figs lengthways and dice 180g pouch of Merchant Gourmet Whole Chestnuts. Add the roasted carrots and 60g lamb’s lettuce. Sprinkle with pomegranate seeds, ½ cup chopped pistachios and serve drizzled with the dressing.
