Try this yummy Satay Noodle Salad.
1. Cook 250g of fine egg noodles according to the pack instructions, rinse in cold water then set aside.
2. For the dressing, mix together 3tbsp peanut butter, 1tsp sesame oil, 1tbsp soy sauce, 1tbsp sweet chilli sauce and 1tsp chilli flakes with 6tbsp water – it should be pourable so add a little more water if you need to.
3. Fry 300g of Simply Pieces in olive oil over a moderate heat for 3-4 minutes on each side till crisp and piping hot throughout.
4. Finely slice 4 spring onions, 100g red cabbage and 6 radishes and place in a bowl. Make ribbons of 2 carrots and 1 cucumber using a peeler and add to the bowl, along with the coriander leaves. Top with the satay dressing and finally add the noodles and mix until coated.
Serve the noodle salad with the crispy Simply Pieces on top. Finish the dish with a scattering of sesame seeds and a squeeze of lime juice.
