Warm Chicken Salad

INGREDIENTS

  • 175g of couscous
  • 400ml of vegetable stock
  • 1 handful of cherry tomatoes
  • 1/2 red onion
  • 1/2 red pepper
  • Coriander to taste

METHOD
Cook the couscous in vegetable stock for one minute. Remove from the heat, cover and leave for another minute. Chop cherry tomatoes, red onion, red pepper and coriander and mix into the couscous. Add slices of Waitrose ready‑to‑eat chicken and return to the heat until warmed through.
